The former Colorado Restaurant will soon house another restaurant, but until the lease is signed, that restaurant’s name will not be made public.
“I am happy to report that we were successful in getting several proposals and hope to have a signed lease for the site soon, possibly this week,” said Kathleen Brady, vice president for Facilities Management and Civic Affairs at Saint Louis University. “I do not want to name the restaurant or any of the details until the deal is completed.”
Brady explained that considerable consideration was given to the type of facility that would replace the Colorado Restaurant, located at 3761 Laclede Ave.
“Over the past two years, a number of surveys, focus groups and studies have been done at SLU regarding what students find lacking on campus, the types of development that faculty, staff and students want to see around campus,” Brady said. “All of that input was taken into consideration, and it was decided to seek another restaurant for that site.”
Brady added that some time was spent consulting with area organizations, such as Grand Center, Inc. and the Center for Emerging Technologies on Forest Park.
Some students have expressed concern that the parking near the restaurant has been roped off for several months.
Brady explained that the parking lots are being reserved for the new restaurant. “We want to be able to demonstrate to potential restaurateurs that this will not be an obstacle and once the lease agreement is signed, the lessee will need those parking places to begin work,” she said.
The Colorado Restaurant offered family dining with a Western theme. The restaurant moved from its location on Laclede Avenue on April 22, 2001. The owner declined comment on the move. SLU purchased the property in 1993.
